Apple Coleslaw

Let me tell you something. I hate this topsy-turvy weather that we’re having almost every single day. Early morning rain. Scorching noon. Drizzling afternoon. Followed by a rainy evening. If it’s gonna rain, then let it rain the whole day. If there’s a promise of sunshine the next day, then let the sun shine from morning till 4pm..or 5pm.

If truth be told, I’m having a hard time taking photos of my food. I can’t quite get the proper lighting and I don’t really like using artificial light…So if you know of any way how I can have a stash of natural light come the rainy day, then the floor is yours.

I’m sorry I’m ranting… must be the weather……………………hah!

Anyway, Coleslaw is the first salad that I learned to love. I order it anywhere that it’s available and I make it at home. I’m curious as to how everyone make their version.

Did you know that Jollibee used to serve coleslaw? Though we don’t frequent Jollibee at the time, there’s a vague recollection of ordering it when I was 10 or 12. Then they removed it from their menu and I never saw it there again.

There are many variations of coleslaw. I’ve tried some with onions, some with pineapple, some with raisins but most of the time it is served the traditional way ~ just cabbage, mayo and carrots.

Well, this time I added crisp, tart and sweet Granny Smith Apples and it gave the coleslaw an extra oooommmmpphhh…

I also used lemon instead of the usual calamansi. It gave it a fresher and bolder flavor.

This coleslaw was for the Pulled Pork Sandwich I made for lunch today. I’ll be sharing the recipe for the sandwich tomorrow.

Apple Coleslaw

Ingredients

Scale
  • 1 cup shredded green cabbage
  • 1 cup shredded red cabbage
  • ½ cup shredded carrot
  • 1 Granny Smith apple, julienned
  • 46 tablespoons light mayonnaise, I used Lady’s Choice MayoLite
  • juice of ½ lemon
  • 1 tsp sugar
  • salt and freshly ground black pepper, to taste

Instructions

  1. Combine all ingredients in a large bowl except salt and pepper
  2. Mix well and add salty and pepper to taste
  3. Cover and place in the refrigerator for at least one hour.
  4. Serve cold. You can eat it as it is but it’s also great on sandwiches.

Lady’s Choice MayoLite is great for recipes that requires the use of quite a lot of mayonnaise. It save you the calories without compromising the taste.
