What if I schedule a soup monday instead of meatless mondays?

This doesn’t require some serious thinking on my side because as you all know… I love soup! I love soup in all it’s form — chunky, thick, creamy, clear, vegetable, seafood, pork, chicken..state as many you can think of. I probably love them all.

Another reason is that Soups are great for hangovers. No, I didn’t drink myself to sleep last night. I’m talking about pure weekend hangover…. hard to accept that it’s monday. Here’s the top six reasons why mondays are hard……

  • 2,675 e-mails……. seriously?
  • the sun is shining on a monday…we were supposed to go on a picnic yesterday and it was raining cats and dogs..
  • it’s harder to wake up Ykaie on a monday….there’s more tickling involved…
  • I’m always sleepy on a monday
  • One word: LAUNDRY
  • 2,675 e-mails…{I maybe exaggerating but it feels like there is}

Since that’s the case… I think it’s just right day to go easy on yourself…..

take time to laugh

eat an ice cream or better yet, go on an ice cream date

watch Batman {The Dark Knight Rises} with the largest bucket of buttery popcorn in hand

find things that make you happy

play with kids and unleash your silly self

bake a pie

make soup

SMILE… monday is a good day.

Tomato, Basil and Cheddar Soup

Ingredients

Scale
  • 1 450g cans of diced tomatoes
  • 1 yellow onion, chopped
  • 2 cloves of garlic, minced
  • 1 tsp olive oil
  • 2 cups of soup stock{vegetable, chicken or beef}
  • 1 cup of plain Greek yogurt
  • 1 cup cheddar cheese, grated
  • ½cup basil leaves, chopped, loosely packed
  • 2 tsp of oregano
  • 1 tsp sugar
  • salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot.
  2. Add the chopped onion and allow to cook until tender.
  3. Add in chopped garlic and cook for an additional two minutes.
  4. Pour in one can of tomatoes (juice and all) and the stock.
  5. Stir in the basil, oregano, sugar, and salt and pepper.
  6. Place the lid back onto the pot and allow to simmer ten minutes.
  7. At the end, stir in the Greek yogurt and cheddar cheese until well blended.
  8. Use either an immersion blender or food processor to puree the soup if you prefer a smooth texture.
  9. Garnish with chopped basil and grated cheddar cheese before serving

  3. The nice thing about being semi-retired and when I do work, it’s out of my house is that I have no more Mondays! I work when I want to and my life no longer revolves around Monday through Friday and the weekend. It’s marvelous. However, even though you do experience the typical Monday, you obvious know how to make the most of it – so GOOD FOR YOU! This soup is definitely a great way to snap out of it! What a delicious looking soup and recipe!
