Liam MacIntyre a.k.a Spartacus had me sleeping at 2am on a Saturday….
So most of my Sunday morning today, I spent fantasizing about spending the whole day in bed — with the a/c turned on and wrapped with the fluffiest and warmest blanket I have.
However, real life gave me shove — I got a shop to run, a four year old who wants to eat a spoonful of peanutbutter for breakfast {No!} and a full laundry basket which has been waiting for me all week. Dang!
Hey, don’t give me that look… I did everything I’m supposed to do…. including making the best of my Sunday..

This is the kind of dish that makes a Sunday….
the kind of dish that makes everybody sit down on the dining table and eat…….a lot.
…eat a whole lot than what they would normally eat on a daily basis….
this is the kind of dish that makes you eat a full meal including a dense chocolate and caramel cake for dessert…
this is the kind of dish that makes you want to take siesta time up a notch….
Obviously the kind of dish that you want to have a photo taken with and if it could sign, I’m sure you’d have it’s autograph….
Just take a look at this nosey little girl who insisted on a picture taken with today’s lunch…
Yup, she was holding a sword. And no, I don’t let her watch Spartacus.
PrintPork Adobo sa Gata {Pork Adobo with Coconut Milk}
inspired by…a recipe my mom saw in the newspaper

Ingredients
- 1Kg pork belly, cut into pieces
- 1½ cups thick coconut milk
- 4 cups thin coconut milk {Or you can use canned coconut milk if fresh is not available}
- ¼ cup vinegar
- 4 tbsp soy sauce
- 2 tbsp brown sugar
- 3 tbsp cooking oil
- 8 cloves garlic, chopped
- 1 tsp black peppercorns
- 2 pcs bay leaf
- 3 tbsp shrimp paste
- finger chilies {optional}
Instructions
- Combine vinegar, soy sauce and brown sugar in a bowl and mix well.
- Add pork belly and marinate for 1 hour.
- Heat oil in a pan and sauté garlic until aromatic…
- Add peppercorns, bay leaf and shrimp paste.
- Add pork belly and brown it a little then stir in the thin coconut milk.
- Add chili and simmer until tender.
- Stir in the thick coconut milk and simmer until sauce is really thick.
- With the pork and the coconut milk, this will yield a large amount of oil, you might wanna skim it from the top.
- Serve with steamed rice

I love Adobo din but I haven’t tried Adobo in coconut milk pa. I am looking forward to try it one of these days.
