I only had five hours of sleep last night but that’s okay. You know why? because I was talking to peanutbutter♥ until 1:30 in the morning. He’s already got internet..isn’t that great??
By that time, they were just having dinner -my SIL, BIL and peanutbutter♥. I was envious. You know how much of a soup person I am. They’ve just been to the seafood market and were having– I think it was Shrimp and Beef Pho– for dinner.
I told him that Ykaie has been talking non-stop about her daddy buying her the doll she had been wanting for months now. She asked peanutbutter♥ to buy her a Baby Alive Doll {you know, the doll that talks, eats, sleep, poops and pees} and her daddy promised her he would buy one. I don’t know if that would be a birthday gift or a Christmas gift since christmas is also just around the corner. I should make a note to myself to buy Christmas cards for my friends and relatives here and abroad soon. Anyways, I’m betting that even if Ykaie knows her daddy would buy her a Baby Alive doll, she would still be surprised when she gets it for real.
You’d also be surprised how good this SBD chicken afritada tastes. Not so different from the regular one, I can assure you. That’s coming from a person who loves Chicken Afritada and cook it all the time. This time to fit the South Beach Diet, I removed potato from the ingredients and used chicken breast strips instead of the usual chicken pieces.
Ingredients:
400g chicken breast, cut into strips
2 green bell pepper, cut into strips
200g pack tomato sauce
1 medium onion, chopped
2 clove garlic, minced
2 tbsp canola oil
1 tbsp fish sauce
salt and pepper to taste
Directions:
- Heat oil in a small pot and sauté garlic and onions until onions become transluscent.
- Add chicken and fry with the onions for a few seconds.
- Add tomato sauce. Simmer for a few minutes until the sauce becomes thick and chicken is cooked.
- Stir in fish sauce, salt and pepper to taste.
- Add bell peppers and simmer for a minute or until bell pepper is cooked but not too soft.
- Enjoy!
