This mojito was downed after my morning coffee {what?}…

Because I have all the reasons to celebrate….

According to my countdown, it’s 89 days to go and peanutbutter will finally be here.

It’s my third week on Shaun T’s Hip Hop Abs and I’m not even keeping track if I’m losing weight or not because I just feel great…plus our weighing scale is broken, hee. All I know is that it’s giving me a different kind of high.

I just changed the sheets. Nothing can beat rolling and sleeping on crisp, clean bed sheets that smells like it’s just been taken out of the dryer.

It’s now the second week from when Ykaie gave up her feeding bottle and my 1st day of finally convincing my niece, Cyra to give up hers..Yeah!

After 6 frigging hours at the salon yesterday, I now have totally straight, sleek and gorgeous hair. I love it.

One month of having only one cup of coffee per day. I managed to substitute one cup of Mint Tea at night. I had two {or was it five?} days of set backs but it’s fine…

It’s friday. I feel like celebrating even though I don’t really know how a “weekend” feels…LOLz

This is an alcohol-free mojito because I don’t drink early in the morning. It’s infused with the sweet flavor of brandy and it has all the flavors of the incoming Summer.

Fresh Basils costs P9 at the grocery and you can get three packs of  Strawberries for P100.

Oh, it’s so tempting to just put a drop of rum or vodka in it….

Believe me, this is serious business coming from a person who rarely drinks …

First thing you must do is make Strawberry Syrup. I don’t have a blender so I mashed 8 strawberries and mixed it with 3 tbsp of sugar and 2 tbsp of water.

I ate a couple of strawberries while waiting for the mixture to boil and thicken in the microwave. It smelled wonderful.

Then I chopped up some basil…

Put everything in a glass including some ice chips and strawberry slices…

I squeezed a lemon wedge and added a few drops of that Brandy flavoring….

Poured the club soda…

…and drank while waiting for three eggs to cook… {the kids had eggs for breakfast}…

Alcohol-Free Strawberry Basil Mojito

Ingredients:

1 cup of Strawberries
2 tbsp water
3 tbsp sugar
club soda or sparkling water or 7up or Sprite
lemon juice and lemon wedge for garnish
Fresh basil leaves, cut into strips or chopped
ice cubes

Directions:

  • Make Strawberry Syrup by putting strawberries, sugar and water in a blender and pulsing until free of lumps. Pour into a saucepan and boil until it thickens. If you don’t have a blender like me, you can just mash the strawberries with a fork and you’re good to go.
  • When strawberry syrup has cooled, put two tablespoon at the bottom of a tall glass.
  • Squeeze a lemon wedge, put a few drops of brandy flavoring and some chopped basil.
  • Fill up to ¾ of the glass with ice cubes.
  • Pour in the sparkling water or club soda.
  • Garnish with strawberries and whole basil leaves before serving.
  • To make it alcoholic, add 1-2 oz. of light rum or vodka.

  2. I do understand that you wouldn’t want rum that early in the morning but I swear I would wait til the sun was over the yardarm to have this wonderful drink. 

    I’ve had mojitos in Cuba and they didn’t look like this.    This looks better!

  4. This looked so good indeed! Great presentation as well. We have mojito mix here (non alcoholic). I just might use that instead of the brandy. Do you that will work? Now I just have to buy the basil and strawberries! Sarap! 😀

  6. we have a party tom. my friends and their kids will be here.  this would be perfect to serve for both the adults and the kids…and i know kids will love this. sige na nga, adults too. but i need that vodka. =)

  12. This mojito makes perfect sense. hahaha Even without the brandy flavoring (which I don’t think we have in zamboanga, I can drown in this. Actually I do remember making something similar to this, it’s just that instead of strawberries and basil, we used kiwis and lemon. 😀
