Bruschetta is always the perfect snack or appetizer. It is very easy to make, it’s delicious and there are lots of toppings to choose from. Most common is tomatoes and cheese. Add a glass of wine, soothing music or a romantic movie, and it could also be a light dinner…..if you’re alone. But that would never really work if you have company, hee.
Anyways, I’ve been thinking of buying a small bed for Ykaie, but I was thinking of how it would fit in our small bedroom. I would have to let go of the big bedroom furnitures and add smaller furnitureĀ instead. I also want our bedroom repainted. I wonder if I could do it? It would be a nice DIY project, don’t you think? Oh, but this is still a plan. Until I find someone who could help at the shop it will remain a plan.
Ingredients:
2 Baguette, sliced diagonally( Ā½-inch thick)
4 cloves garlic
5 medium tomatoes,seeded and diced
5 tbsp extra-virgin olive oil
2 tbsp chopped fresh Basil leaves or
1 tbsp dried basil
6 anchovy fillets
salt and pepper to taste
Directions:
- Combine tomatoes, olive oil, basil, salt and pepper.Let it sit in a cool place for 30 minutes to infuse.
- Grill sliced baguette until lightly golden and crispy.
- Rub each with garlic to infuse it with flavor.
- Top each with our tomato mixture and small pieces of the anchovy fillet.
- Serve immediately.
