This Shrimp Pesto Pasta is perfect for a busy weeknight dinner. Garlicky basil pesto tossed perfectly with the pasta and shrimp makes it an easy quick meal.

Shrimp Pesto Pasta

There are lots of pasta in our pantry that are expiring soon so our menu these days include many pasta dishes especially for dinner when we would want something light. As you all know, pesto is one of my family’s favorite because of Ykaie. This is her favorite ever since she ate her first pasta. That’s why it’s been included in our menu rotation here at home.

The other day, Daddydoodledoo and I went on a hunting for canned pumpkin purée so I can make my Fall dishes but we didn’t find any kahit na dun sa supermarket na dati kong pinagbibilhan. We made it at home around dinner time and I had to whip up something easy and quick.

Good thing I have some shrimp thawing in the fridge — I decided to make Shrimp Pesto Pasta.

SHRIMP PESTO PASTA RECIPE VIDEO

This quick and easy meal is possible because I don’t make my own pesto. Yes, you can make your own pesto, but there are so many high quality bottled pesto these days that I feel like it’s not always worth the extra time and effort. My favorite brands are Gourmet Farms and Barilla.

All you need to do is sauté all the ingredients together. Then finished off with a sprinkling of parmesan cheese. If only I have cherry tomatoes and basil, I would’ve added them too.

Shrimp Pesto Pasta

Ingredients

Scale
  • 250g spaghetti, cooked according to package direction
  • 2 tbsp butter
  • 5 cloves garlic, minced
  • 500g shrimp, shells removed and deveined
  • 1/23/4 cup pesto sauce
  • 1/2 tsp salt, if needed
  • grated parmesan cheese

Instructions

  1. Melt butter in a pan.
  2. Add garlic and cook until fragrant.
  3. Add the shrimp and cook until orange.
  4. Add the pesto sauce and bring to a simmer.
  5. Add the cooked spaghetti and mix well.
  6. Season with salt, if needed and add about 1/4 cup grated parmesan cheese.
  7. Mix well. Turn off heat.
  8. Transfer to a serving plate and sprinkle with more grated parmesan cheese before serving
