A cold and lazy day called for instant ramen. Here’s what I came up with: a spicy and comforting bowl of Kimchi Ramen…
The last few weeks was really cold and I was too busy and lazy to cook anything in the morning. It’s during times like these that my tummy calls for a hot bowl of instant ramen.
We love instant ramen (or instant noodles) in this family and we always keep some for emergency. Emergency means a cold day, a sick day, or a lazy day when one prefer nothing but to be inside a warm blanket and be a couch potato. So I always keep packets of it in my pantry. I know how we all feel about instant noodles. We love it but we all know how unhealthy it can be because of the msg laden seasonings. So we don’t eat it often. I know… it’s one of our guilty pleasures. We don’t eat it as its own, though, as much as possible we try to add something healthy like egg or vegetables.
One of the instant ramens that I love is this Nongshim Kimchi Ramyun Noodle Soup. It costs around ₱40 and a packet is big enough for two persons.
I don’t know if you can tell, but I love spicy instant ramens. This is the reason why I love this Kimchi ramen. And because peanutbutter♥ and I are crazy about kimchi, you’ll almost always find a bottle of it in the fridge.
To pimp up this kimchi instant ramen, I just added some fresh ingredients: hardboiled egg, lots of kimchi, and a sprinkling of chopped leeks. Gave this a stir and the first slurp was heaven!
Today is an exhausting start of the week…race you to the coffee maker.

Ingredients
- 1 packet of your favorite Kimchi Ramen (I used Nongshim Kimchi Ramyun)
- 1 hardboiled Egg, halved
- 2–3 tbsp Kimchi
- 1–2 tbsp chopped leeks or chives
Instructions
- Cook the Kimchi Ramen according to package direction.
- Pour it into a bowl and top with the hardboiled egg, kimchi, and leeks.
- Stir and enjoy.

To be honest, I am not a fan of instant noodles, but this looks really tasty with that perfectly cooked eggs and kimchi!
