The simplest Pear Pomegranate Salad that was made using what’s in the fridge…
The problem with this no rice diet thing is that when I decided to serve the leftover Smoky Honey Sriracha Ribs from Twinkle’s 7th Month Supergirl party the next day, I didn’t have something to go with it… peanutbutter♥, of course, ate it with rice so I thought of making a salad.
I always keep some lettuce in the fridge so I know I can make a salad out of something there. There were two pieces of pears, and this Jalapeño Havarti Cheese. Guess what? I also found a pomegrenate. Sis bought it for me when she went to Divisoria, I didn’t know what to do with it at the time so I kept it in the crisper. It was just what I need to at least give color to my salad to make it appetizing.
I know my salad looks kawawa with only four ingredients — well, five, including the Brown Sugar Balsamic Vinaigrette but it did its job of complementing the ribs. It was delicious too, if I may say so. I just think it needed some nuts and one more kind of vegetable.

Ingredients
- 3 cups greens (any kind of lettuce you want)
- 1 pear, cored and sliced
- 1/2 cup pomegranate arils
- 1/4 cup cubed Jalapeño Havarti Cheese
Dressing
- Brown Sugar Balsamic Vinaigrette (click for the recipe)
Instructions
- Place all salad ingredients in a large salad bowl.
- Drizzle with desired amount of dressing then toss to evenly coat.
- Serve immediately.
