Discover Cuisine at Enderun Colleges

Saturday was yet another lucky day for me as I was able to attend the Discover Cuisine Event held at Enderun Colleges in Fort Bonifacio.

Enderun is a four-year undergraduate college that offers a full range of bachelor’s degree and non-degree courses in the fields of international hospitality management, business administration, and entrepreneurship
ADF + Enderun Executive Chef Marc Chalopin performed a special culinary demonstration. He made Bouillabaisse, employing French culinary techniques in cooking it. Cooking this dish lasted for 1 hour and 30 minutes.

Bouillabaisse is a traditional Provençal fish stew originating from the port city of Marseille, France.

The culinary demonstration was done in this Culinary Amphitheater.

Chef Marc charmed the bloggers with his humor and  trivias. He even called a few blogger volunteers to try some of the cooking procedures. Among those things that I learned in this demo are:

It takes 10,000 flowers to come up with 1 kilo of Saffron.

Slice the squid at 45 degree angles so it would roll nicely when you fry it.

Smarla and my cousin, Rome

It was so nice to finally meet Smarla of Everyday Sweet Notes in person. It was also nice of Enderun and Nuffnang for allowing me to bring a “plus one guest“. My cousin was able to tag along with me.

Everything smelled so delicious, from the simmering of the broth, frying of the squid up to the making of the spicy provençal sauce. And after almost two hours of waiting, we were finally able to try this delectable traditional french dish.

After the food sampling, we were given a short tour around the campus which ended in a three course lunch at their Restaurant 101. {I’ll also do a separate post about it}
