Hello! I’m back in my kitchen this week. It was fun going out and attending all those events but, gosh, I missed cooking. This Tinapa Fried Rice is a product of leftover boneless milkfish tinapa (smoked boneless milkfish), hungry tummies, and a craving for salted egg and tomato. It’s one of the easiest, tastiest, and quickest meals I know. It will only take you a few minutes to make this meal — but it’s also very delicious.

It’s still a busy and hectic month, and in the midst of it, I find myself having sleepy bouts on certain times of the day,  strong cravings, a little nauseated, and dizzy in the morning. I’m suspecting we’re pregnant and I’m hoping I am. I am a little worried and scared, though because I just had a Blighted Ovum Pregnancy a little over two months ago and of course, I don’t want it to happen again.

So I bought a PT Kit yesterday after going to the market and did the test. It tested positive! Yaaayy! We’re pregnant! We’ll probably be scheduling our check-up this week and pray for a smooth and healthy pregnancy. We’ve been wanting to get pregnant since Ykaie turned four. It’s been, what, three years in the making?

That’s my great news for now. I hope I don’t get too dizzy or nauseated to cook. Actually, right at this very moment, I got a gazillion recipe on my mind I’d like to make and eat !!! I just don’t where to start — GAAHH.

And when.. because I just heard our bed call my name…. I’m going back to sleep.

Tinapa Fried Rice

Ingredients

Scale
  • 5 cups cooked rice
  • 1 cup tinapa flakes (smoked fish) I used boneless milkfish tinapa
  • 3 cloves garlic, minced
  • 1 tbsp oil
  • 2 large salted egg
  • 2 large tomato
  • pepper to taste

Instructions

  1. Just like your regular fried rice, heat oil in a large wok or pan.
  2. Sauté garlic in oi until fragrant. Add rice and pepper. Mix well.
  3. Add the tinapa and mix well for around a minute.
  4. Transfer to serving bowls or plate.
  5. Top with salted eggs and tomatoes.

  6. Aaah. This is something that I would always order in any Filipino restaurant that serves Tinapa Fried Rice. I even eat this with butter ( sinful, I know ). It’s the fried rice that I like and can eat. PS. Congratulations on the good news.
