Easy Chicken Fajita and My Busy Weekend

Chicken Fajita

This Chicken Fajita is part leftover chicken, part leftover tortilla, part fajita seasoning… and a very busy day.

This living in your own home thing  can be quite stressful, you know. You don’t run out of things to do and it keeps on piling up.Weekends was a whirlwind of activities too!  Gasp! I can’t even keep up with the days of the week. It’s already wednesday today but it feels so much like a monday because I don’t think I was awake when I did all the things I did that day.

I wasn’t even able to go to the palengke to buy us food to cook! OMG!  And I had a hungry tummy and a hungry peanutbutter waiting for some warm delicious lunch. We didn’t have to worry about Ykaie because she was at school and even though I am a little zombie-fied in the morning, preparing a nice baon for Ykaie is a priority.

Good thing we had this leftover roasted chicken in the freezer and all I had to do was add a little fajita seasoning mix, and sauté it with some green and red bell peppers, and white onions. The tortilla was from the Apple Pie Dip and Cinnamon Totilla Chips I made last week for snacking.

Tadaaa!! LUNCH!

Just in case you’re wondering what made my head spin over the weekend. Well, here’s a rundown….

Chips Ahoy Ice Cream Creation Event Sm MOA

We were out of the house at 6:30am last saturday and made our way to BGC. We attended the La Filipina Canned Meats event (which I’m gonna be blogging about soon.) That event lasted until around 1 pm.  After that we left and headed over to SM Mall of Asia. We had coffee at Caffe Bene while waiting for the clock to strike at 4pm because we were planning to drop by Chips Ahoy Ice Cream Creations event.

Dinner was at Fresh at Solaire Resorts and Casino. I won dinner for six so I treated my in laws and my cousin Rome. We even had coffee at Starbucks afterwards! That got us home at 12 midnight.

Frozen Party Favors

The next morning (Sunday), Sis and I went to the jungles of Divisoria to buy Frozen party favors… Guess who’s turning seven next month? Then we went to S &R, hunting for Halloween-themed candies.

Causeway in Banawe

Dinner found us at Causeway in Banawe where I feasted on Chicken Feet, Shark’s Fin Dumplings and Pork Asado. Shucks! Having dinner at these delicious places needs to stop.

This week, there’ll be no leaving the house because it’s Ykaie’s exam week plus there are chores and errands to take care of. My calendar’s marked for the weekend, though. Another adventure is coming up.

Easy Chicken Fajita and My Busy Weekend

Ingredients

Scale
  • 3 cups of Shredded Roasted Chicken
  • 1 large white onion, sliced
  • 1 green bell pepper, cut into strips
  • 1 red bell pepper,cut into strips
  • 2 tbsp oil
  • 2 tbsp fajita seasoning
  • flour tortilla
  • cilantro leaves
  • calamansi (or lemon)
  • garlic cream dressing ( or sour cream mixed with pepper, salt, and garlic)

Instructions

  1. Heat a large frying pan over high heat then add your oil.
  2. Sauté the onions until they start to brown then add the bell peppers.
  3. Stir-Fry the vegetables for 5-7 minutes until they start to soften then add the chicken and fajita seasoning.
  4. Stir fry for another minute then season to taste.
  5. Warm Tortillas over a non-stick skillet. Top with a generous spoonful of the chicken and peppers. Add a sprig of fresh coriander, drizzle with garlic cream sauce, and squeeze half a calamansi over it.
  6. Serve with Ice Cold Beer or Ice cold Pineapple Juice
