Pork Giniling is one of the most staple dishes in the Filipino table.
I eat it not only with rice but also as a filling in pandesal {popular Filipino bread}.
What more can I say? This is tasty and flavorful….just perfect to top off a steaming bowl of rice. The egg become very tasty too as it absorbs the slightly thick sauce.

Ingredients

- 750g ground pork
- 2 potato, diced
- 1 carrot, diced
- 1 cup raisins
- 2 cups tomato sauce
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp cooking oil
- 1 cup water
- 5 pcs hard-boiled egg, peeled
- salt and pepper to taste
Instructions
- In a wok, heat 2 tbsp cooking oil and sauté garlic and onions until onion become translucent.
- Put in ground pork and cook around five minutes, allowing the meat to turn a little brown and bring out the oil.
- Pour in tomato sauce and water.
- Bring to a boil and simmer for 15 minutes.
- Add potatoes, carrots and raisin. Mix well
- Simmer for another 10 minutes or until carrots and potatoes are cooked
- Season with salt and pepper to taste.
- Add hard-boiled eggs and simmer for 30 seconds
- Turn-off heat and serve with steamed rice.
