Pork Belly Sinigang (Sinigang na Liempo)

If there’s one dish that never gets bumped off our weekly meal plan, it’s Sinigang. Rain or shine, bagyo or tag-init, sinigang is life in this household! It’s one of those dishes that just hits differently, no matter what the weather is like outside.

When it’s rainy and gloomy, nothing beats the comfort of a steaming bowl of Sinigang. That sour, flavorful broth warms you up from the inside out—like a cozy hug in a bowl. Add in some rice and patis on the side, and I swear, it’s a complete mood-lifter. But here’s the twist: even on a hot, sunny day, Sinigang is STILL a must! There’s something strangely satisfying about slurping that hot, asim-kilig soup while beads of sweat start forming on your forehead. LOL! Parang you’re in your own little food spa — pawis pero happy!

Honestly, Sinigang is such a staple in our home that it wouldn’t feel like a complete week without it. It’s one of our family’s all-time favorite ulam — especially for the kids, Ykaie and Twinkle. They both grew up loving Sinigang, and now, it’s almost like a little family tradition to have it at least once a week. ❤️

Of course, every family member has their preferred version. Most of the time, we cook Sinigang na Buntot ng Baboy, because it’s Daddydoodledoo’s ultimate favorite. He loves how rich and gelatinous the pork tail gets after simmering for hours. It’s always a hit — kahit pa paulit-ulit naming kainin!

But this week was extra special. Since it’s Summer vacation, I finally got the chance to bring Ykaie with me to the market. It’s one of those little mom-daughter bonding moments I really treasure — just walking around, choosing veggies, haggling with the manongs and manangs. Syempre, she had a say in what we were going to cook, and as expected, she picked out their favorite pork cut — liempo!

So today’s dish is none other than Pork Belly Sinigang. 🐷🍋🌶

Why liempo, you ask? Well, Ykaie and Twinkle love it because of the fat — and let’s be honest, fat = flavor. That rich, melt-in-your-mouth pork belly just takes the sinigang to a whole new level of sarap. The broth becomes extra savory and silky, and the meat? Ugh, so soft and tender you don’t even need to chew much. Pair it with a mound of steaming rice, some sawsawan on the side, and maybe a slice of green sili if you like a kick — it’s the perfect combo!

So yeah, whether it’s sunny, rainy, or somewhere in between, Sinigang will always have a place at our table. It’s more than just food — it’s comfort, memories, and family all in one bowl.

How about you guys? Anong version ng Sinigang ang fave ng family niyo? 😋
