As requested by Daddydoodledoo, today’s ulam is Pork Ribs Adobo! And if there’s one thing that’s ALWAYS on our weekly menu—mamshies, it’s definitely adobo!
Pwedeng Adobo sa Dilaw, Chicken and Pork Adobo, or even Adobong Sitaw. But this Pork Ribs Adobo recipe has definitely become a favorite here at home. I guess it’s because it’s more flavorful because it’s bone-in.
Unlike my usual adobo that has a thick, oily sauce, this one has more sauce, but it’s on the thinner side. I add more water than I usually would because, of course, the ribs need to be fully submerged while simmering. This not only makes the meat tender but also soaks up all the flavor, making every bite delicious.

Ingredients
- 1.15 kg pork ribs, cut into pieces
- 3 tbsp oil
- 9 cloves garlic, chopped finely
- ½ cup soy sauce
- ½ cup vinegar
- 1¼ cup water
- 3 pcs bay leaf
- 1 tbsp brown sugar
Instructions
- Heat oil in a pot and add the garlic. Cook until fragrant and almost brown.
- Add the pork ribs pieces and cook until brown.
- Add soy sauce, water, bay leaf, and vinegar.
- Cover and bring to a boil.
- Simmer for 30 minutes until the pork ribs are tender.
- Add the brown sugar and mix well.
- Turn off heat.
- Serve with steamed rice
