Chicken Caesar Smashed Tacos
- 500g ground chicken
- 2 cloves garlic, chopped finely
- salt and pepper
- tortilla bread
- crispy onions for topping, optional

- romaine lettuce
- spring onion
- parmesan cheese
- caesar dressing
- Mix the chicken topping. Combine the ground chicken, chopped garlic, salt and pepper. Mix well so that the seasoning is evenly dispersed throughout the chicken. Set aside.
- Toss the salad. In a bowl, add the shredded Romaine, spring onions, parmesan cheese, and Caesar dressing and toss to combine.Set aside.
- Top the tacos. Spread a heaped spoonful of the chicken mix onto each mini tortilla, and spread it into a thin, even layer.
- Cook the tacos. Set a large frying pan or skillet over high heat and add a drizzle of olive oil. Place a topped tortilla, chicken side down, into the pan. Cook for four minutes, then flip and cook for another minute on the other side. PRO TIP: Depending on the size of your pan, you should be able to cook several tacos at once.
- Garnish and serve. Top with the salad. Finish with the extra grated parmesan, crispy onions, and a drizzle of Caesar sauce, then enjoy.
