So, here’s the thing – you know how between the holidays, everything feels a bit… offbeat? Like, you’re not really sure if you should still be eating leftover Christmas cookies or starting to think about the new year? Well, in the middle of all that food chaos, I found myself whipping up a big batch of Chicken Potato Salad, all because my eldest daughter, Ykaie, requested it.

Honestly, it wasn’t even on my radar. I was still recovering from the holiday feasts, and I thought I could get away with making something light and easy. But nope, Ykaie had other plans. She loves this dish so much, it’s like her new go-to comfort food, and she made a very specific request: “Mom, can you make the Chicken Potato Salad?

And what else could I do but say yes? I mean, it’s one of those recipes I’ve made a million times before – simple but so satisfying. You’ve got the tender chunks of chicken, the creamy potato base, and just enough mayo and seasoning to make it the perfect balance. Plus, it’s the kind of dish you can make ahead and enjoy for days, which is a major win during these in-between holiday days when no one feels like cooking every night.

So, I grabbed the ingredients – some chicken breast, a bunch of potatoes, mayo, carrots, celery and a couple of my secret spices (which Ykaie knows are always a part of my “just wing it” recipe style). The best part? It’s quick to make and doesn’t require too much attention, which was exactly what I needed after a few weeks of holiday hustle.

I boiled the potatoes until they were perfectly tender (but not mushy, you know the struggle), then shredded the chicken into bite-sized pieces. After everything was mixed together with the mayo, I just let it chill in the fridge for a few hours. By the time Ykaie came home, the chicken potato salad was ready to be devoured – and let me tell you, it did not last long.

We sat down together and enjoyed it. Between the craziness of the holidays, it felt like a small moment of calm. And Ykaie? She was in heaven. It’s funny how something so simple can bring so much joy, especially when it’s something your kid has been craving.

I think that’s what I love most about this time of year – it’s the little things that make the biggest memories. Even though we’re between the major celebrations, food like chicken potato salad still brings everyone together and makes these in-between moments feel special. And who knows? Maybe I’ll make it a little tradition of whipping it up whenever we need a cozy, comforting dish before the new year officially kicks in.

Chicken Potato Salad

Ingredients

  • 6 potatoes
  • 1 whole chicken breast
  • 1 (470ml) pack of mayonnaise
  • 1 carrot, shredded
  • 4 stalks of celery, chopped
  • 1/2 white onion, cjopped
  • 1 tbsp of sugar (or more)
  • salt and pepper to taste

Instructions

  1. Cut the potato into cubes and boil for about 10 minutes or until fork tender.
  2. Boil the chicken breast for 20 minutes and shred using fork or your hands.
  3. In a large bowl, combine the potato, chicken, carrots, celery, onions, and mayonnaise.
  4. Season with salt, pepper, sugar and pepper to taste.
  5. Add more mayo if needed.
  6. Chill in the fridge for at least 6 hours before serving. Enjoy!
