She loves this dish so much, it’s like her new go-to comfort food, and she made a very specific request: “Mom, can you make the Chicken Potato Salad?”

The best part? It’s quick to make and doesn’t require too much attention, which was exactly what I needed after a few weeks of holiday hustle.
I boiled the potatoes until they were perfectly tender (but not mushy, you know the struggle), then shredded the chicken into bite-sized pieces. Ingredients
- 6 potatoes
- 1 whole chicken breast
- 1 (470ml) pack of mayonnaise
- 1 carrot, shredded
- 4 stalks of celery, chopped
- 1/2 white onion, cjopped
- 1 tbsp of sugar (or more)
- salt and pepper to taste
Instructions
- Cut the potato into cubes and boil for about 10 minutes or until fork tender.
- Boil the chicken breast for 20 minutes and shred using fork or your hands.
- In a large bowl, combine the potato, chicken, carrots, celery, onions, and mayonnaise.
- Season with salt, pepper, sugar and pepper to taste.
- Add more mayo if needed.
- Chill in the fridge for at least 6 hours before serving. Enjoy!
