So the other day, I whipped up this super yummy Caesar Salad Dressing (kind of a SaladStop copycat, if you’re familiar with that place), and let me just say—it was chef’s kiss good. Now, I didn’t just make the dressing for fun, I had a goal in mind. You know how everyone starts the year with big health goals? Well, one of mine is to eat healthier, so I promised myself I’d have one salad a day. I’m aiming to up my veggie intake (and sneak in a few extra greens where I can) !So let’s start with this Chicken Caesar Salad.
Since I was so excited to use the dressing, I knew I had to make a Chicken Caesar Salad to go with it. It was honestly one of those days where I didn’t have a ton of time to cook but still wanted something delicious and satisfying. So here’s how I did it: I started by pan-frying a chicken breast in a non-stick pan. Super quick and easy. No need for heavy oils—just a little bit of salt and pepper to season it, and boom, I had my chicken.
I also grabbed some store-bought croutons because hey, sometimes you need to save time, and croutons from the store are a solid shortcut. Can’t go wrong with crispy, crunchy bread cubes.
Thankfully, I always have fresh lettuce in my fridge—like, it’s my fridge staple. So I chopped it up into bite-sized pieces and threw it into a big bowl. Then I added my croutons, some grated parmesan (the more cheese, the better, right?), and of course, the homemade Caesar dressing. I tossed everything together until it was all nice and coated. So good already!
The last touch was the chicken, which I sliced into strips and placed on top. To make it even better, I added a few slices of hard-boiled egg, because why not? Eggs just bring that creamy richness that really takes it up a notch.
And let me tell you… this salad was everything. It was so good, I could honestly eat it every single day. It’s the perfect balance of crispy, creamy, and savory, with the chicken giving it that nice protein boost. Plus, it’s super satisfying without feeling heavy. I’m definitely going to be making this again—and probably a lot more salads this year to keep me on track with my health goals. Here’s to more easy, delicious meals like this one!
