Happy New year everyone!

Well, this is definitely a first for us—no big cooking or prep for New Year’s Eve! It’s been a bit of a whirlwind since Christmas, especially when Daddydoodledoo came down with the flu right after. So with all that’s been going on, we just didn’t have the energy or time to go all out like we usually do. But you know what? We kept it simple, and it turned out just right.

Instead of the usual grand spread, we ended up having Lugaw with Tokwa’t Baboy for dinner—totally Ykaie’s idea because she was really craving it! And honestly, it was so comforting. Sometimes, simple dishes like that really hit the spot.

Since Daddydoodledoo has been working from home, he didn’t get to celebrate with us the way we would’ve liked either. He’s been in the middle of work stuff, so that made it easier for us to just keep things low-key.

I also bought two packs of lusis (those mini firecrackers), but only two. Why? Because Twinkle is terrified of anything related to fire. It took a lot of convincing just for her to light up five pieces. But when the clock struck 11:59, we were all huddled under the table, munching on 12 grapes for good luck. Ayan kitang-kita ang paa ni Daddydoodledoo, nyahahaha!

After the grape-eating ritual, we went up to the rooftop to watch the fireworks. As expected, Twinkle was still scared of the loud bangs and flashing lights, but after some convincing, she finally braved it and joined us. There’s always something magical about watching fireworks together, no matter how simple the celebration is.

Then, New Year’s Day arrived, and I cooked up a feast. This was supposedly our Media Noche! I made some yummy Baked Salmon, Chicken Piccata, and Buko Salad. After that, we headed to Colinas Verdes to have lunch with Mama Lucy and Papa Sony. It was a nice, relaxing day spent with family.

Here’s to wishing the best for 2025—may we hit our goals, prosper, and thrive. Cheers to a fresh new year filled with love, laughter, and lots of delicious food!

Baked Salmon for a Happy New Year! Hello 2025!

Ingredients

Scale
  • 900g salmon fillet
  • salt and pepper
  • lemon juice (1/2 lemon)
  • 3/4 cup cream cheese, softened
  • 1/2 cup mayonnaise
  • 1/2 cup parmesan cheese
  • 4 cloves garlic, minced
  • 200g french beans
  • 3 tbsp butter
  • lemon slices for garnish

Instructions

  1. Preheat oven to 400°F (200°C). Put the salmon fillet into a foil tray. Pat dry.
  2. Season with lemon juice, then salt and pepper.
  3. In a small bowl, combine softened cream cheese, mayonnaise, garlic, and parmesan cheese.
  4. Top the Salmon with the mayo-cheese mixture.
  5. Bake until cooked through, about 20-25 minutes, depending on the thickness of your fish and your preference of doneness.
  6. While fish is baking, saute the french beans in butter until cooked, about 3-5 minutes.
  7. When Baked Salmon is cooked, put the buttered french beans on the side and garnish it with lemon slices on top.
