Spooktacular Eyeball Meatball Sandwich

Eyeball Meatball Sandwich that is spooky and delicious! It’s made with juicy meatballs in a yummy marinara sauce.

As you all know, the last quarter of the year always gets me excited. Favorite ko talaga ang Haloween, Fall and Christmas season. That’s because I get to make Halloween Food, Fall Treats (kahit wala namang fall sa Pilipinas), and Christmas Recipes. And now, it’s that time of the year again, Halloween is just around the corner.

And because of that, I thought I’d make this Eyeball Meatball Sandwich — Ykaie loves Meatball Subs/Sandwiches. Also gives me the chance to put Strawberry Juice in Halloween party blood bags. Twinkle was so thrilled when she had this for brunch.

What’s in the Eyeball Meatball Sandwich?

Ingredients:

  • For the Meatballs:
    • 500g ground beef (or turkey, chicken, or a meat substitute)
    • 1/2 cup breadcrumbs
    • 1 egg
    • 2 cloves garlic, minced
    • 1 white onion, chopped finely
    • 1 tsp dried oregano
    • 1 tsp dried parsley
    • 1/4 tsp Salt and pepper
  • For the Sauce:
    • 1 jar marinara sauce
  • For the Sandwich:
    • Sub rolls or hoagie buns
    • Sliced Mozzarella Cheese (these will be your “eyeballs”)
    • Black olives (for the pupils)
    • Fresh basil or parsley (for garnish, if you want to get fancy!)

Let’s Get Cooking!

  1. Mix the Meatball Ingredients: In a large bowl, combine the ground beef, breadcrumb, egg, garlic, onion, oregano, parsley, salt, and pepper. Get your hands in there and mix it all together until well combined. Roll the mixture into meatballs—aim for about the size of a golf ball.
  2. Fry the Meatballs: Fry the meatballs in oil until brown.
  3. Prepare the Sauce: While the meatballs are baking, heat up your marinara sauce in a saucepan. For an extra spooky touch, you can stir in a little red food coloring to give it a blood-red hue!
  4. Make the Eyeballs: Put the meatballs in a microwave safe pan. Put mozzarella slices on top and an olive slice. Microwave until the cheese melts to create the perfect “eyeball” effect!
  5. Assemble the Sandwich: Once the meatballs are done, it’s time to build your sandwich. Place a few meatballs in each sub roll, and generously spoon over the marinara sauce.
  6. Serve and Enjoy: If you’re feeling festive, garnish with fresh herbs. Serve these sandwiches warm, and watch as your guests’ eyes widen in delight (and a hint of horror) when they see what’s for lunch/dinner!

This Eyeball Meatball Sandwich is not only delicious but also a fun way to bring some Halloween spirit to your table. You can get creative with the presentation too—maybe add some fake spiders or cobwebs for a full-on haunted experience!
