Siklab+ is The Bistro Group’s latest concept that is an ode to the diversity of flavors in Filipino cuisine. It offers a dining experience that is both satisfyingly familiar and yet vibrantly exciting with its bold takes on the country’s traditional culinary heritage with an approachable modern touch.

Siklab+’s flavors are bold and assertive and I was able to get a first-hand experience last week starting with the Kamias-Pineapple Slush (₱195) and the Sampalok Lemonada (₱145). Both these drinks are the balance of sour and sweet. Very refreshing and palate cleansing.
I love kuhol/snails, so I was really excited to try Kuhol ni Tanggol (₱345), their bold take on Ginataang Kuhol. The snails they have are big and meaty smothered in a rich and creamy coconut milk gravy that’s mildy spicy.

Their Pinalutong na Tawilis (₱225) is surely a labor of love because unlike those that we regularly purchase from Tagaytay, these are small, deboned, most are headless, and fried to a real crisp. Perfectly seasoned too and perfect with the spicy vinegar dipping sauce on the side.
A healthy appetizer is the Lumpiang Ubod ng Sarap (₱295), fresh spring rolls made from hearts of palm and ground pork.
Siklab+ Main Course

One of my favorites is the Pinatisang Fried Chicken (₱695). It’s one whole deep fried chicken that’s marinated in patis/fish sauce and calamansi — I guess they marinated it really long for the flavor to seep through the meat. It was served with crisp camote chips on the side.

A truly Filipino dining experience cannot be complete without SINIGANG .. so we had two!
We had Sinigang na Bangus sa Bayabas (₱395) and Trio Sinigang Na Baboy (₱425) which is pork shoulder with three different kinds of pampa-asim: sampalok, bayabas, and kamias.

Another favorite is the Paboritong Pork Sisig (₱345) served sizzling, crispy and oh-so-flavorful with pork ear, pork belly, and liver.

Sobrang sarap i-pair with these two equally flavorful rice: Dilis Rice (₱225) and Chorizo Rice (₱225).

Of course, there has to be vegetables for balance and health. We had Gising Gising Na!, spicy beans in coconut sauce (₱225) and Tortalong (₱255), their version of tortang talong.
Desserts

For dessert, we had the traditional Puto Bumbong (₱175) and Palitaw (₱195). I love that the palitaw has latik and coco jam!

And we also had their bestseller, the Bonggang Bibingka (₱185). I think I tasted a hint of pandan in there.
