Chicken Salad
- 100g chicken breast, cut into bite size pieces
- salt and pepper
- paprika
- 1 tbsp butter
- 2 cups lettuce, chopped
- 1/4 cup cucumber, sliced
- 5 pieces cherry tomato, halved
- 1/4 small carrots, shredded
- 3 tbsp corn kernels
Creamy Garlic Dressing
- 3 tbsp mayo
- 3 garlic cloves, minced
- juice of 1/3 lemon
- Salt
- Pepper
- 1 tsp sugar
- water to thin it out, optional
- Make the Creamy Garlic Dressing: Just combine all the ingredients in a medium bowl and mix well. Put in the refrigerator for at least 1 hour before using.
- Cook the chicken: Season the chicken breast pieces with salt, pepper, and paprika. Mix well. Melt butter in a heated pan and cook the chicken breast until brown,
- Layer the lettuce on your serving plate and then assemble all the other ingredients on top.
- Top it with the chicken, cucumber, tomato, shredded carrots, and corn kernels.
- You can serve the dressing drizzled on top of the salad or separately.
- Serve immediately. Enjoy!
