Chicken Salad

Ingredients

  • 100g chicken breast, cut into bite size pieces
  • salt and pepper
  • paprika
  • 1 tbsp butter
  • 2 cups lettuce, chopped
  • 1/4 cup cucumber, sliced
  •  5 pieces cherry tomato, halved
  • 1/4 small carrots, shredded
  • 3 tbsp corn kernels

Creamy Garlic Dressing

  • 3 tbsp mayo
  • 3 garlic cloves, minced
  • juice of 1/3 lemon
  • Salt
  • Pepper
  • 1 tsp sugar
  • water to thin it out, optional

Instructions

  1. Make the Creamy Garlic Dressing: Just combine all the ingredients in a medium bowl and mix well. Put in the refrigerator for at least 1 hour before using.
  2. Cook the chicken: Season the chicken breast pieces with salt, pepper, and paprika. Mix well. Melt butter in a heated pan and cook the chicken breast until brown,
  3. Layer the lettuce on your serving plate and then assemble all the other ingredients on top.
  4. Top it with the chicken, cucumber, tomato, shredded carrots, and corn kernels.
  5. You can serve the dressing drizzled on top of the salad or separately.
  6. Serve immediately. Enjoy!
