Chicken Salad

It’s more than seven months into 2024 and let’s say my goal of eating healthy is not quite there yet. I’m maybe 50% there. I can blame it on lack of inspiration, my never ending household chores, and generally a tiring busy life in general. But I’m gonna change all that starting this month. It’s gonna be healthy eating, no exposure to negative things and emotions, more manifesting and positivity, and creating. CREATING blogposts, recipes, videos, fun times with my family. JUST CREATING for me and my universe. Let’s start by creating a nutritious and balanced lifestyle… and creating a simple yet delicious salad.

Who says healthy eating can’t be delicious?

To make my Chicken Salad, I added cucumber, cherry tomatoes, shredded carrots, and corn kernels. Then I tossed it in my yummy Creamy Garlic Dressing.

Remember, the key to a successful healthy eating journey is finding what you enjoy. Experiment with different flavors and ingredients to create recipes that you love.

Chicken Salad

Ingredients

Scale
  • 100g chicken breast, cut into bite size pieces
  • salt and pepper
  • paprika
  • 1 tbsp butter
  • 2 cups lettuce, chopped
  • 1/4 cup cucumber, sliced
  •  5 pieces cherry tomato, halved
  • 1/4 small carrots, shredded
  • 3 tbsp corn kernels

Creamy Garlic Dressing

  • 3 tbsp mayo
  • 3 garlic cloves, minced
  • juice of 1/3 lemon
  • Salt
  • Pepper
  • 1 tsp sugar
  • water to thin it out, optional

Instructions

  1. Make the Creamy Garlic Dressing: Just combine all the ingredients in a medium bowl and mix well. Put in the refrigerator for at least 1 hour before using.
  2. Cook the chicken: Season the chicken breast pieces with salt, pepper, and paprika. Mix well. Melt butter in a heated pan and cook the chicken breast until brown,
  3. Layer the lettuce on your serving plate and then assemble all the other ingredients on top.
  4. Top it with the chicken, cucumber, tomato, shredded carrots, and corn kernels.
  5. You can serve the dressing drizzled on top of the salad or separately.
  6. Serve immediately. Enjoy!
