Bopis
- 500g chopped boiled pork lung and heart
- 3 tbsp annato oil
- 5 cloves garlic, minced
- 1 onion chopped
- 2 bay leaf
- 2 tbsp liquid sseasoning
- 2 tsp soy sauce
- 1/4 cup vinegar
- 1 cup water
- 1 carrot, chopped into small pieces
- 1 red bell pepper, chopped into small pieces
- 1 chili pepper, chopped (optional)
- fish sauce and ground black pepper to taste
- In a deep pan, heat annato oil. If you don’t have annato oil, just sauté annato seeds in oil for a minute.
- Add garlic and onions and sauté until fragrant.
- Add the chopped pork lungs and heart and cook for 2 minutes.
- Add the bayleaf, liquid seasoning, soy sauce, and water. Mix well.
- Bring to a simmer and simmer for about 20 minutes. Add more water if needed.
- Add the carrots and bell pepper. Mix well. Bring to a simmer.
- Pour in vinegar and simmer for 3 minutes.
- Add the chili pepper, if using.
- Season with patis and ground black pepper to taste.
- Serve with steamed rice.
