Ingredients

  • 500g chopped boiled pork lung and heart
  • 3 tbsp annato oil
  • 5 cloves garlic, minced
  • 1 onion chopped
  • 2 bay leaf
  • 2 tbsp liquid sseasoning
  • 2 tsp soy sauce
  • 1/4 cup vinegar
  • 1 cup water
  • 1 carrot, chopped into small pieces
  • 1 red bell pepper, chopped into small pieces
  • 1 chili pepper, chopped (optional)
  • fish sauce and ground black pepper to taste

Instructions

  1. In a deep pan, heat annato oil.  If you don’t have annato oil, just sauté annato seeds in oil for a minute.
  2. Add garlic and onions and sauté until fragrant.
  3. Add the chopped pork lungs and heart and cook for 2 minutes.
  4. Add the bayleaf, liquid seasoning, soy sauce, and water. Mix well.
  5. Bring to a simmer and simmer for about 20 minutes. Add more water if needed.
  6. Add the carrots and bell pepper. Mix well. Bring to a simmer.
  7. Pour in vinegar and simmer for 3 minutes.
  8. Add the chili pepper, if using.
  9. Season with patis and ground black pepper to taste.
  10. Serve with steamed rice.
