Our Latest Family Favorite: Strawberry Pancakes!
- 1 1/2 cups all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 1/4 cups milk
- 1 large egg
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- 1 cup fresh strawberries, sliced
- Whisk the dry ingredients: In a large bowl, combine flour, sugar, baking powder, and salt.
- Mix the wet ingredients: In a separate bowl, whisk together milk, egg, melted butter, and vanilla extract.
- Combine wet and dry: Pour the wet ingredients into the dry ingredients and mix until just combined. Don’t overmix!
- Fold in the strawberries: Gently fold in the sliced strawberries, being careful not to mash them.
- Cook the pancakes: Heat a lightly greased griddle or skillet over medium heat. Pour 1/4 cup batter per pancake and cook for 2-3 minutes, or until bubbles form on the surface and the edges start to set.
- Flip and cook: Flip the pancakes and cook for another 1-2 minutes, or until golden brown.
- Serve and enjoy! Serve your strawberry pancakes warm with your favorite toppings, such as fresh strawberries, maple syrup, whipped cream, or a homemade strawberry sauce.
