  • 1 ¼ cup milk (almond or your preference)
  • 1 tablespoon vanilla extract
  • Cooking spray

Instructions

  1. In a large bowl, whisk together the flour, baking powder, matcha powder, salt, and sugar.
  2. Create a well in the center of the dry ingredients.
  3. In a separate bowl, whisk together the melted butter, egg, milk, and vanilla extract.
  4. Pour the wet ingredients into the well in the dry ingredients.
  5. Gently whisk the batter until just combined, taking care not to overmix. A few small lumps are okay.
  6. Let the batter rest for 5 minutes. This allows the baking powder to activate for fluffier pancakes.
  7. Preheat a large skillet over medium-high heat and lightly coat it with cooking spray.
  8. Pour about ¼ cup of batter per pancake onto the hot skillet.
  9. Cook for 2-3 minutes, or until bubbles appear on the surface and the edges start to set.
  10. Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.
  11. Serve immediately and enjoy your matcha pancakes with your favorite toppings! Some ideas include maple syrup, whipped cream, fresh fruit, or even a white chocolate drizzle.
