Matcha Magic: A Delicious Twist on Classic Pancakes
- 1 ½ cups all-purpose flour
- 3 ½ teaspoons baking powder
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 tablespoon matcha powder
- 3 tablespoons butter, melted (plant-based for dairy-free)
- 1 egg
- 1 ¼ cup milk (almond or your preference)
- 1 tablespoon vanilla extract
- Cooking spray
- In a large bowl, whisk together the flour, baking powder, matcha powder, salt, and sugar.
- Create a well in the center of the dry ingredients.
- In a separate bowl, whisk together the melted butter, egg, milk, and vanilla extract.
- Pour the wet ingredients into the well in the dry ingredients.
- Gently whisk the batter until just combined, taking care not to overmix. A few small lumps are okay.
- Let the batter rest for 5 minutes. This allows the baking powder to activate for fluffier pancakes.
- Preheat a large skillet over medium-high heat and lightly coat it with cooking spray.
- Pour about ¼ cup of batter per pancake onto the hot skillet.
- Cook for 2-3 minutes, or until bubbles appear on the surface and the edges start to set.
- Flip the pancakes and cook for an additional 1-2 minutes, or until golden brown.
- Serve immediately and enjoy your matcha pancakes with your favorite toppings! Some ideas include maple syrup, whipped cream, fresh fruit, or even a white chocolate drizzle.
