Nacho Salad
- lettuce, chopped
- tomato, chopped
- white onion, chopped
- canned corn kernels, drained
- cucumber, chopped
- Nacho Chips
for the dressing
- 1/2 cup mayo
- 1/4 cup milk
- 1 tbsp minced garlic
- 2 tbsp lemon juice
- 1 tbsp brown sugar
- salt and pepper
- Make the dressing: Combine mayo, milk, garlic, lemon juice, brown sugar, salt and pepper. Mix well. If dressing is too thick, add more milk. Set aside.
- In a large bowl combine the lettuce, tomato, onion, cucumber, and corn kernels.
- Add the dressing and mix well.
- Use as “dip” or “topping” for the Nacho Chips.
