Chicken Afritada
- 3 tbsp cooking oil
- 1 large potato
- 3 cloves garlic, minced
- 1 onion, chopped
- 800g chicken, cut into pieces
- 150g pack tomato paste
- 800ml water
- 1 chicken cube
- 1 carrot, cut into bite size pieces
- 1 red bell pepper, cut into bite size pieces
- 1 green bell pepper, cut into bite size pieces
- patis to taste
- Heat oil in a pot and fry the potatoes until cooked. Remove from pot and set aside.
- Remove excess oil and leave about 2 tbsp. Sauté onions and garlic until onions become translucent.
- Add chicken and cook with the onions and garlic until brown.
- Add water and tomato paste. Simmer until chicken becomes tender.
- Add potatoes and carrots. Simmer for around 2 minutes. By this time the sauce becomes thick because of the starch in the potatoes.
- Season with fish sauce to taste.
- Add bell peppers and simmer for a minute or until bell pepper is cooked but not too soft.
- Serve with steamed rice.
