Grilled Liempo

Ingredients

  • 4 slices pork belly or liempo, this is 1.2kg
  • 1/2 cup soy sauce
  • juice of 4 calamansi or 2 tbsp 7Grains Lemonsito/Calamansi Puree
  • 1/4 cup banana ketchup
  • charcoal for grilling

to serve

  • Lato/seaweed
  • steamed veggies like okra and camote tops
  • tomato slices
  • steamed rice

Instructions

  1. In a small bowl, combine soy sauce, calamansi juice, and banana ketchup. Mix well.
  2. Put your pork belly in a large bowl and pour the soy-calamansi-ketchup marinade.
  3. Marinate for 1 hour or overnight.
  4. Grill the pork belly on each side and baste it with the marinade from time to time to keep it flavorful and juicy.
  5. Serve the pork belly with Lato Salad (seaweed), steamed rice, and a spicy soy-vinegar dipping sauce.
