Coconut Snowballs | www.thepeachkitchen.com

When there’s a snowman hanging around, I’m sure there are plenty of snowballs within the area. Since what we had is a Snowman Cheeseball, a completely edible and delicious cold-but-not-snow creation, our snowballs turned out to be Coconut Snowballs, also a completely edible orb of make-believe snow.

I originally wanted to make snowball cookies but due to the extremely tedious snowman-themed dishes that sis and I are preparing, I decided I don’t want to bake. I just made my Oreo Truffles, rolled in into coconuts, sprinkled some sugar crystals.. and Voila! — Easy snowballs!

This is so delicious too! Highly addictive, you won’t stop eating till it’s gone.

Coconut Snowballs

  • Author: The Peach Kitchen

Ingredients

Scale
  • 1 pack Oreo cookies, that’s around 24 pieces
  • ¾ cup or ¾ of a pack of cream cheese {I used Philadelphia}
  • 1 cup White chocolate chips or candy melts
  • 1 tbsp canola oil
  • shredded coconuts and white sugar crystals

Instructions

  1. Remove Oreo fillings. I think it’s too sweet if you include them in the truffles.
  2. Use a food processor to crush oreo cookies. I don’t have a food processor so I just imagined the face of somebody I’m not so fond of to crush Oreos manually.
  3. Stir in softened cream cheese with the crushed oreos. Use the back of a large spoon to help mash the two together.
  4. Roll the mixture into 1″ balls and place on a plate or a plastic container.
  5. Refrigerate for a few hours. I let mine sit in the fridge overnight. They will look like those yummy oreo balls below.
  6. Combine white chocolate chips and canola oil.
  7. Melt white chocolate chips using double broiler or microwave.
  8. Dip oreo balls into white chocolate, tap off the excess.
  9. Roll into shredded coconuts and white sugar crystals.
  10. Set aside on a wax-paper-lined cookie sheet to dry.
  11. Refrigerate for a couple of hours before serving.

HAHAHA! I love #2! I also don’t own a food processor! I will definitely do that as well when I try to attempt this, but will definitely look for an alternative to shredded coconuts. haha 😛

  3. My daughter will surely be delighted if I’ll do this. I’m really so inspired with your delish recipes.
