Okay. That Autumn part in the title may have you thinking if I live in a different part of the world.
Well, I do…. in my head. I don’t know why I am so crazy about Fall season, maybe because we just don’t have it here and I like lots of falling leaves…
Remember that Fall Themed Tea Party from two years ago? and those Pumpkin Spiced recipes I do? Well, I’m about to do them again and some new ones in the next couple of weeks. For the mean time, let me just tell one thing I do with leftover roasted chicken because believe me when I tell you that we always have leftover chicken at home. If you have kids, I’m sure you know what I’m saying.
I love using leftover chicken in sandwiches, soups, and salads. Usually I just chop some tomatoes and the leftover chicken then tuck them in inside a hot pandesal or in between some sliced bread.
But since I picked up some Butterhead lettuce from the supermarket the other day, I thought it would be nice to try and make a salad out of it. It’s my first time to see Butterhead lettuce at the supermarket. Normally, I see only Romaine Lettuce (my favorite) and Iceberg lettuce.
Butterhead Lettuce is a head lettuce with a loose arrangement of leaves, known for its sweet flavor and tender texture. It is not as crispy as Romaine but it has a distinct flavor on its own. I am not picky with my greens and I love trying out new ones. This has just been added to my list of favorite greens. Sis didn’t like it, though. I had all three heads all to myself.

Ingredients
- Butterhead Lettuce, washed and drained
- shredded or chopped leftover roasted chicken
- chopped apples
- organic almonds
- shaved parmesan cheese
- Balsamic Vinaigrette (click for the recipe)
Instructions
- Just chop up all the ingredients and combine in a large bowl.
- Drizzle with Balsamic Vinaigrette

The Parmesan cheese looks like chips! Cute. This is great. really healthy minus the chicken skin but still great. Really simple and quick, I like salads like this for on the go persons, they are easy to prep.
