Remember when I made that Kiwi, Strawberry Yogurt and Chia Seeds Smoothie?
I told you that I would love to add chia seeds to my diet but it’s a bit expensive and that I don’t think I could consume chia daily? Well, at that time, I bought a packet of chia shot which is an 8g pack that costs ₱69. The other day, I was in such a good mood and thinking about my health goals. I was in a health food store and looking at buying some nuts. I saw a 453g bag of chia seeds for around ₱600, the compulsive buyer in me went right ahead and bought it.
I already know the first thing to make with my chia seeds when I opened it — Chia Pudding!
I’ve always been a skeptic when it comes to food trends but I am such a fan of coconut milk I knew right away I had to try this. Besides who can resist something that is no-bake and takes 30 seconds to make?
I made this using fresh coconut milk but if you don’t have the stomach for it, then you can make this using either almond milk or coconut milk that comes in tetra packs. I think those coconut milk are UHT. Thankfully, I am used to drinking coconut milk with gulaman and green pinipig and I love it’s rich, creamy taste. Bonus points that buying fresh coconut and having it squeezed at the market tend to be a lot cheaper than the one in tetra pack.
All I did to make this pudding is simply mix coconut milk, chia seed,s and honey in a bowl and stick it inside the fridge overnight. The coconut milk separates after a while, I just had to stir it to make it smooth again. What came out in the morning was a thick, rich pudding similar to tapioca.
The pudding tastes delicious with the mango,the coconut milk and honey. And to think that all I did was mix the ingredients and put it in the fridge!
It’s so easy, so healthy, and so so good.

Ingredients
- 6–7 tbsp chia seeds
- 2 cup coconut milk or almond milk
- 2 tbsp honey
- 6 tbsp diced ripe mango
Instructions
- Stir together all the ingredients in a bowl except mango and mix well.
- Chill for about 6 hours or overnight.
- Top with diced mango when ready to serve.

That does look so healthy! I’ve never purchased chia seeds.. nor tasted them. I think I would have to begin with a pudding recipe like this one! xx

That looks yummy. I used to have some Chia Seeds, but I ran out. I love mixing it with our food or any baked goods. This one would be good. 🙂
