So I’ve busy eating steaks, ramens, chips dipped in sour cream, crackers and hummus, and the most delicious blueberry chocolates in the world– like you would never have imagined– behind this post. This Grilled Eggplant is, sort of, my way of balancing things out.
My sis and the kids has been having all these eating out and movie nights like crazy. The movie nights come with movie snacks galore of course!, — including butong pakwan {watermelon seeds} which the kids are so crazy about.
It has become reeeaaally hard for me to say no to all those munchies. Nobody’s perfect and I do accept the fact that there are times that the mind and the spirit is both too weak to ignore the call of chocolates…
…because they taste absolutely heavenly..
..and they make us happy..
So as much as possible I make myself beautiful, nutritious, delicious, and healthy food to help keep myself on track. I still have 20lbs to go, you know.
On other news, Ykaie has been loving some grown-up crime-drama movie. She is crazy about Mission Impossible: Ghost Protocol and could watch it three times a day. So I’m downloading the two Charlie’s Angels movies. I think she’s going to love it because it’s a lighter movie and the leads are three beautiful women. Of course, I’ll be watching with her so I can explain the things that needs explanation.
Alright, now that you know what will go on my Sunday, let’s talk about the sandwich….
This sandwich has all things delicious in it so don’t go and look for meat in it cause you’re not gonna find one. It’s all cheese, tomato, grilled eggplant, bread, and basil pesto.
I used a non-stick grill pan, which I brushed with Olive Oil, to grill the eggplants. I think it’s sooo pretty with grill marks to boast of. You can also roast the eggplant in the oven along with the sliced tomato, if you’re not fond of fresh ones, but it wouldn’t have those beautiful grill marks.
Then just layer everything on top of your bread –resulting in a sandwich that is packed with flavors and roast-y goodness.

Ingredients
- 1 eggplant, sliced 1/2 inch thick
- salt to taste
- 2 tbsp olive oil
- 1 large tomato, sliced
- 4 tbsp basil pesto
- 8 tbsp shredded mozzarella cheese
- 4 thick bread slices
Instructions
- Season eggplant with salt and grill using a grill pan that is brushed with olive oil.If you don’t have a grill pan, you can also layer it in a baking sheet, drizzle with olive oil, sprinkle with salt and roast in the oven until cooked. Set aside.
- NOTE: you can also roast your tomato slices if you’re not fond of fresh ones in your sandwich.
- Spread some basil pesto on top of each of the bread slices,
- Sprinkle with shredded mozzarella cheese and bake in the oven until cheese has melted.
- Layer the sliced tomato and eggplant on top and return in the oven for another minute or two.
- Serve with a more basil pesto on top.

Love eggplant, and love the idea of grilling it. A sandwich with eggplant and tomatoes, basil and mozzarella is what I call a Summer comfort food!

I never thought that eggplants can be used in sandwiches. I’m so used to seeing tomatoes and lettuce in sandwiches, but not eggplants. Seeing your grilled eggplant now with cheese, tomatoes and basil pesto makes me want to prepare one myself. Yummy! –Tetcha
