Open-Faced Salted Duck Egg Sandwich

- 1 Salted Duck Egg, sliced
- 1 Tomato, sliced
- a handful of spinach leaves
- 1 tbsp mozzarella cheese {or any quick melting cheese}
- 1 tbsp mayonnaise
- sesame bread
- Toast sesame bread in the oven
- Spread a thin layer of mayonnaise
- Layer spinach leaves, tomato slices, cheese and egg slices.
- Return to the oven for a few minutes until cheese has melted
- Serve warm
