Reading has always been a good way for me to invite sleep.

I think installing 50 Shades of Grey in my phone is a totally bad idea.

I told peanutbutterā™„, who I was talking to a while ago, that I would be sleepingā€¦

But here I am, twenty minutes past midnight and I am still wide awake…scrolling in the darkā€¦.reading about Christian Grey and Anastacia Steele.

I imagine I’d be up until the wee hours of the morning. By then, it would be too late for me to go to sleep.

Installing this App that allows me to save local drafts of posts in my phone is also a bad idea…because I’m blogging while reading now..then I’ll publish later when there’s wifi…

It would be another sleepless day for me but then again, I would make sure Iā€™d be looking forward to brunch because of this….

Lemon has always been a good wake-upper. And I could eat lemon curds all dayā€¦by the spoonfuls! if I must.

This bread pudding is sweet and tart and smells of morning sunshines. It’s easy to make and you can make this using your favorite bread. I made this using gardenia pandesals.

Lemon & Cream Cheese Bread Pudding with Lemon Curd Sauce

Ingredients

Scale
  • 5 1/3 cups pandesal or any other kids of bread, day old and cut into cubes
  • 1 cup milk
  • 1 cup heavy cream
  • 2 eggs
  • 2 egg yolks
  • 1/2 cup + 2 tbsp sugar
  • juice of 1/2 lemon
  • zest of 2 lemons
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/3 cup sugar
  • juice of 1/2 lemon

Lemon Curd Sauce

  • 3 egg yolks
  • 6 tbsp sugar
  • juice of 2 small lemons
  • zest of 1/2 lemon
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1/2 of a stick of butter, cut into cubes

Instructions

Prepare the lemon sauce.

  1. Combine the cornstarch and water in a small bowl. Mix well.
  2. Whisk the egg yolks, sugar, lemon zest and lemon juice together in a pan over low heat.
  3. Stir constantly for about 4 minutes until slightly thickened.
  4. Stir in the cornstarch mixture and continue stirring for 3 minutes or more until thick enough to coat the back of a spoon.
  5. Remove from the heat and add the butter, one cube at a time.
  6. Stir until smooth. Transfer to a container.
  7. Press a sheet of plastic wrap on the surface of the curd to prevent a skin from forming.
  8. Refrigerate until ready to serve. Heat in the microwave quickly before serving with the bread pudding.

To make the bread pudding:

  1. Heat the milk with the sugar in a pan on low heat (or in a microwave) and stir until completely dissolved.
  2. Remove from the heat and let cool for 5 minutes.
  3. Transfer this mixture to a bowl and mix in the heavy cream.
  4. Whisk in the eggs and egg yolks gradually until well combined.
  5. Add the vanilla, lemon juice and lemon zest. Mix well. Set aside.
  6. In another bowl, beat the cream cheese together with the sugar and lemon juice. Set aside.
  7. Butter an 8×8 inch square baking dish. Arrange half the amount of bread cubes in a single, even layer.
  8. Drop dollops of the cream cheese on top of the bread cubes. Pour about 3/4 cup of the custard over the bread cubes.
  9. Top with the remaining half of bread cubes.
  10. Drop dollops of the remaining cream cheese over the bread.
  11. Carefully pour the rest of the custard mixture evenly over the whole thing. Set aside for 1 hour at room temperature or overnight in the fridge, covered and let come to room temperature for 30 minutes before baking.
  12. Bake at 350 degrees for 45-50 minutes until the pudding is set. Best served warm drizzled with the lemon sauce.

I know what you mean about reading and sleep.Ā  When I get in bed I always read and now that I’m using my iPad as my reader, it’s hard not to surf, blog and write, but so far – I’ve manage to resist that urge. Unfortunately, I still end up reading into the wee hours of the morning. UGH!Ā  Your bread pudding is awesome!Ā  You combined two of my favorite things – bread pudding and lemon curd.Ā  I don’t think a dessert could get much better than that!
