And because I don’t really like scrambled eggs and omelettes….
And because I’m trying to add veggies to my daily diet….
I’ve decided to try this….serve my sunny side up egg inside a bell pepper ring♥…
This yellow bell pepper is a bit sweet but it added a whole new flavor to the egg that no spice could do.
And admit it, it’s pretty cute, right?
It doesn’t matter what color of bell pepper you use. Use red, green or purple..
I’m sure it will still look awesome and it will become a lot more flavorful….
Bell Peppers are jam-packed full of nutrients too! It’s a good source of vitamin C, thiamine, vitamin B6, beta carotene, folic acid and contain a large amount of phytochemicals that have exceptional antioxidant activity.
No special recipe needed here. Just cook your sunny side up the way you always do. Just let the egg fall inside the bell pepper ring.
