Apple Coleslaw
- 1 cup shredded green cabbage
- 1 cup shredded red cabbage
- ½ cup shredded carrot
- 1 Granny Smith apple, julienned
- 4–6 tablespoons light mayonnaise, I used Lady’s Choice MayoLite
- juice of ½ lemon
- 1 tsp sugar
- salt and freshly ground black pepper, to taste
- Combine all ingredients in a large bowl except salt and pepper
- Mix well and add salty and pepper to taste
- Cover and place in the refrigerator for at least one hour.
- Serve cold. You can eat it as it is but it’s also great on sandwiches.
