Penne Mango Salad

Ingredients

  • 500g Penne, cooked according to package directions
  • 5 stalks of celery, chopped
  • 250g Ham, cut into small squares
  • 23 cups mayonnaise
  • 4 mangoes, diced
  • 1 carrot,chopped
  • salt,pepper and sugar to taste

Instructions

  1. Combine pasta, celery, carrots, mayonnaise and ham in a large bowl.
  2. Mix well and season with salt, pepper and sugar to taste.
  3. Add mangoes last or it will turn into mush.
  4. Chill before serving

Notes

Take note that this is not a make ahead recipe. You have to make this the day that you are serving it or it won’t taste as good.
