Pumpkin Pie Spiced Halloween Pancake

- 100g squash/pumpkin, diced
- Pancake mix yes, I use a ready-made pancake mix because I don’t have time to make it from scratch and I used Pillsbury
- 1 tbsp Homemade Pumpkin Pie Spice
- 4 drops Orange gel food coloring
- ♥ for the syrup, I used prepared chocolate syrup colored with Black gel food coloring
- Place diced pumpkin/squash in a baking dish. Sprinkle with a few drops of oil and bake at 190°C for 10 minutes or until it is golden and soft.
- Mash roasted pumpkin/squash with a fork.
- Mix Pillsbury pancake Mix according to package directions.
- Add mashed pumpkin, homemade pumpkin pie spice and orange gel food coloring.
- Cook pancake as you normally would, heat a non-stick pan and grease slightly with butter.
- Scoop about ¼ cup batter onto the hot griddle.
- Cook until bubbles appear on the surface and the edges look dry.
- Turn over and cook until golden brown.
- Draw creepy Halloween characters such as Jack O’ Lanterns, Spider Web and spiders with the black chocolate syrup.
