Lemon-Garlic Chicken
- 400g chicken thigh fillets
- 3 tbsp olive oil
- ½ tsp salt
- 6 cloves garlic, crushed
- 2 tbsp flat leaf parsley, chopped
- 1 lemon, halved
- zest of the lemon
- Heat olive oil in a non-stick skillet
- Fry chicken thigh fillets until it gets a little brown
- Add crushed garlic, lemon zest and season with salt
- Stir for a few seconds.
- Toss in juice of half a lemon and flat leaf parsley..
- Serve with lemon wedge
