The Discover Cuisine Event last Saturday ended with a three-course lunch at Restaurant 101
Restaurant 101 is the training restaurant of Enderun Colleges. Its seasonal menus are conceived by Enderun’s world-renowned culinary faculty to showcase the techniques of traditional French cuisine, the bold flavors of the Asian market and a commitment to innovating with fresh, sustainable local ingredients.
The restaurant, which offers monthly wine tasting dinners and affordable daily lunch specials, can also accommodate private parties and large-scale banquets, in two salon prives and a magnificent, high-ceilinged 240 square meter atrium.
It opens during lunch and dinner.
Our lunch started with bread, {dinner roll} which has three kinds of spread/dip: butter, eggplant spread and olive oil-balsamic vinegar.
SALMON fillet, mi-cuit, caper-herb dressing, warm potato salad {P380}
The salmon was very soft. It was a melt-in-your-mouth softness that was perfectly accented with the caper-herb dressing.
CHICKEN BASQUAISE, stewed sweet peppers, Bayonne ham {P680}
The chicken was juicy and soft inside and crispy outside, complimented by the peppers and ham. I actually finished the peppers and ham under the chicken first before chicken itself because it was very tasty.
Louis XV,chocolate crisp, ganache, praline bar perfect with Woodstock Vitage Port ’94 {P200}
There are only two restaurants in the world that serves this dessert. Restaurant 101 and Le Louis XV – the magnificent Alain Ducasse restaurant in Monte Carlo. So what exactly is this chocolate dessert? From the bottom, it is composed of hazelnut dacquoise feulletine with praline paste and chocolate mousse made with paradise ganache, coated with chocolate sauce and garnished with edible gold leaf on top.
