Pork Menudo

- 500g pork liempo, cut into cubes {or any other cut that has fat}
- 2 large potato, diced
- 1 carrot,diced
- 250g hotdog, sliced
- 250g pork liver,diced
- 1 cup raisins
- 2 cup tomato sauce
- 2 white onion, chopped
- 4 clove garlic, minced
- ½ cup canola oil {or any other cooking oil}
- ½ cup soy sauce
- 5 tbsp calamansi juice
- 2 pcs bay leaf
- salt and pepper to taste
- Marinate pork in soy sauce-calamansi mixture for 1-2 hours.
- Fry potatoes,liver and hotdog in heated oil until the edges are a little brown and set aside.
- In a wok, heat around 2 tbsp cooking oil and sauté garlic and onions until onion become translucent.
- Add pork and sear until a little brown
- Pour in the soy-calamansi marinade and the tomato sauce.
- Add bayleaf
- Simmer until pork is cooked and the sauce is reduced into a thick gravy
- Add potatoes, carrots, pork liver and raisins
- Simmer for a few minutes, season with salt and pepper to taste
- Serve hot with steamed rice
