Shrimp-Mango Pasta Salad

Take note that this is not a make ahead recipe. You have to make this the day that you are serving it or it won’t taste as good.

Ingredients

Scale
  • 500g Fusili, cooked according to package directions
  • 12 pieces cucumber, seeded cut into little pieces
  • 2 stalks of celery, chopped
  • 2030 Shimps, peeled and de-veined
  • 23 cups mayonnaise
  • 34 mangoes,diced
  • salt,pepper and sugar to taste
  • 1 carrot,chopped

Instructions

  1. Combine pasta, cucumber, celery, carrots, mayonnaise and shrimp in a large bowl.
  2. Mix well and season with salt,pepper and sugar to taste.
  3. Add mangoes last or it will turn into mush.
  4. Chill before serving
