Kinulob na Manok/ Chicken Kinulob

I’m sorry I haven’t been posting home-cooked meals..

There are too many special occasions…too many Christmas parties…too many birthdays… too much going out of the house and eating at restaurants….

…and simply, too much things to do. I’ve also been busy gaining too much weight in between those things.

I haven’t even done my Christmas shopping yet. Have you done yours?

Anyways, like I’ve said, diets are forbidden these days so lets all enjoy the holiday goodies and be merry! Here’s a suggestion for your Noche Buena/Media Noche.

Chicken Kinulob is like a special version of Pinaupong Manok/Sitting Chicken. It’s a tastier version because of all the additional ingredients. This is great for Noche Buena or Media Noche because it is very easy to do and very delicious too. I just had some of the leftovers.

Kinulob na Manok/ Chicken Kinulob

Ingredients

Scale
  • 1 whole chicken
  • 200g pork belly or bacon, sliced
  • 3 chorizo de bilbao, sliced diagonally
  • 1 cup olive oil
  • salt and pepper to taste
  • 2 pcs bay leaf

Instructions

  1. Put everything in a pot.
  2. Cover and let it boil.
  3. Turn heat to low and simmer until chicken and pork belly is cooked.
  4. Serve with steamed rice.
