Ever notice how really satisfied you are when you get to eat what you crave for? Well, that’s how I feel today.
I’m always having very specific cravings these past few days. The other day, I craved for fish and mango salsa with fish sauce. See? how much more specific can that get?
So, I went to the market and bought myself some fish slices, looked for the prettiest ripe mangoes I can find and some tomatoes. I wanted some cilantro but I can’t find any but that’s okay since what I’m really craving for is the sweet-tangy taste of the mango paired with some nicely fried fish meat.
Today, I want fried chicken. Fried chicken dipped in banana ketchup. I don’t have any chicken in the freezer that I can fry. Most annoying. I haven’t been to the grocery in two weeks. That sucks cause it’s one of my favorite things to do and I saw some cool fall recipes that I wanted to try.
Oh, and I want to go on a picnic soon…..
Ingredients:
4 slices of Red Snapper
salt and pepper
canola oil for frying
♥ 2 ripe mangoes, peeled, pitted and diced
1 onion, chopped
2 tomatoes, chopped
2 tbsp fish sauce
1 tbsp calamondin juice
optional: 1 tbsp cilantro,chopped
Direction:
- Combine the mango, tomato, onion, fish sauce, calamondin juice and cilantro {if you have any} in a bowl and mix well.
- Set aside in the fridge to chill.
- Season fish slices with salt and pepper.
- Fry in oil until golden brown.
- Serve fish with mango salsa on the side.
- Have a wonderful and healthy lunch♥.
