Soups are one of the easiest thing to cook and I think they are also the most filling. Soups are also very comforting specially on a cold rainy morning or a drizzling afternoon. They also give comfort when you’re not feeling well. They’re like hugs in a bowl. I think you can tell your problems to a good soup and they would listen….soups are very good listeners. They would absorb all your problems, much like how ice cream soothes depression and the problems of the heart.
Aside from blogging, cooking is a great stress-reliever for me. I always dream of a nice kitchen with one of those granite countertops. I think you will always find me in the kitchen if I had those…. cooking my problems away. If I’m going to have them installed I think I’d get granite countertops Richmond. Ingredients
- 1 cup celery, chopped
- 1 cup chopped tomatoes {I used canned}
- 1 onion, chopped
- 1 tbsp olive oil/canola oil
- 4 cups chicken stock
- 1 tsp dried basil
- salt and pepper to taste
for the meatballs:
- 250g ground lean beef
- 1 chopped onion
- 1 egg
- salt and pepper
Instructions
- Combine all the ingredients for the meatballs and mix well.
- Shape mixture into small meatballs and set aside.
- In a small pot, sauté onion in heated oil until translucent.
- Add tomatoes and chicken stock.
- Simmer for a few minutes.
- Dropmeatballs, one by one, into the simmering soup and simmer for 20 minutes until the meatballs are done.
- Add celery, basil, salt and pepper.Simmer for 30 seconds.
- Serve hot.
