Why am I eating creamy and delicious potato salad today?? Well, the other day, I thought on doing the South Beach Diet again. I thought I’d enroll myself in those SBD delivery programs which will deliver meals to me daily. I called and asked for a quotation. Boy, was it expensive! I think I’m going to need to get some budget to be able to avail of it. So I had another idea. Why don’t I just post South Beach recipes for the whole month next month. I’ll cook them myself. Just like what I did before. What do you think of that?

and let me start with this delicious bowl of potato salad.

Ingredients
- 2 cups baby potatoes, cleaned
- 4 ham sliced, chopped
- 300g mayonnaise
- 1 apple, diced
- 1 cup pineapple tidbits {I used canned}
- ¼ celery, chopped
- 2 tbsp fresh dill, chopped
- salt and pepper to taste
Instructions
- Boil baby potatoes until tender.
- Combine all the ingredients in a bowl and mix well.
- Serve cold as a side dish or as a snack
