Minatamis na Saging (Sweetened Plantains with Tapioca)

I am so glad its not 37° today but it’s still scorching hot. I used to buy lots of ice and put them in my bathwater to disperse body heat. Today, that’s what I want to do……..lie down in an inflatable pool full of ice and water.

I guess I couldn’t do that. So I just settled for some sweetened plantains which went into a glass of Halo-Halo.

We usually eat this sweetened plantains with crushed ice and milk making it a perfect summer snack. I bet my peanutbutter is already missing this. This is one of his favorite merienda [afternoon snack].

Ingredients:
8 pieces ripe plantains, sliced or whole
2 cup brown sugar
2 cups water
2 pieces screwpine leaves [pandan], cut into 1-inch pieces
2 cups cooked tapioca pearls

Directions:

  • Combine all the ingredients in a pot except the tapioca pearls.
  • Boil until bananas are cooked and sauce becomes syrupy.
  • Add tapiocas and simmer for a minute. Turn off heat.
  • Serve cold or serve with crushed ice and milk.
