Poached Egg in Tomato Sauce

Ingredients

- 1 tbsp olive oil or canola oil
- 1 small white onion,chopped
- 2 cloves of garlic,minced
- 2 tomatoes, diced
- 4 tbsp tomato sauce
- (you can substitute a can of diced tomatoes for the tomato and tomato sauce)
- ½ cup water
- 3 eggs
- 4 slices honey-oat bread or any crusty bread will do
- Parmesan cheese (optional)
- salt and pepper
Instructions
- In a small pan sauté garlic and onions in heated oil.Cok gently on low heat until oil gets infused with the flavors of onions and garlic but don’t let them brown.
- Add tomatoes and tomato sauce. Simmer until tomatoes are cooked and sauce a little thick.
- Pour in water if sauce becomes too thick but the diced tomatoes aren’t cooked yet.
- Season with salt and pepper to taste.
- Gently crack each egg on top of the sauce and poach it until the whites are opaque but yolk is still runny.Cover partially while cooking.
- Brush each side of bread with olive oil and grill in an oven toaster until it’s crusty outside and still chewy inside.
- Serve poached egg on top of crusty bread and sprinkle with grated parmesan cheese on top
