Poached Egg in Tomato Sauce

If you are in the mood to make a delicious and healthy brunch dish then this is the dish of choice.And it’s very simple to make too! Eggs are very rich in protein and packed with lots of nutrients but has very low calories.

Poached Egg in Tomato Sauce

Ingredients

Scale
  • 1 tbsp olive oil or canola oil
  • 1 small white onion,chopped
  • 2 cloves of garlic,minced
  • 2 tomatoes, diced
  • 4 tbsp tomato sauce
  • (you can substitute a can of diced tomatoes for the tomato and tomato sauce)
  • ½ cup water
  • 3 eggs
  • 4 slices honey-oat bread or any crusty bread will do
  • Parmesan cheese (optional)
  • salt and pepper

Instructions

  1. In a small pan sauté garlic and onions in heated oil.Cok gently on low heat until oil gets infused with the flavors of onions and garlic but don’t let them brown.
  2. Add tomatoes and tomato sauce. Simmer until tomatoes are cooked and sauce a little thick.
  3. Pour in water if sauce becomes too thick but the diced tomatoes aren’t cooked yet.
  4. Season with salt and pepper to taste.
  5. Gently crack each egg on top of the sauce and poach it until the whites are opaque but yolk is still runny.Cover partially while cooking.
  6. Brush each side of bread with olive oil and grill in an oven toaster until it’s crusty outside and still chewy inside.
  7. Serve poached egg on top of crusty bread and sprinkle with grated parmesan cheese on top
