Since it’s still Summer and I’m on SBD I thought of making this salad for lunch. There are lots of fresh veggies on the market during Summertime and they are pretty cheap. This is wonderful eaten on it’s own or as a side dish on any meal. What’s wonderful about salads is there’s no actual measurement on the ingredients. You can add more or lessen the ingredients depending on the number of people who would eat and the taste won’t be affected.
Ingredients:
Lettuce, torn into bite size pieces, you can use any variety you want.
plum tomatoes
cucumber
kalamata olives
feta cheese
red onions
salt
♥ For the dressing:
6 tbsp olive oil
1 ½ tbsp fresh lemon juice
1 tsp dried oregano
Directions:
- Mix lettuce, tomatoes, cucumber, red onion and kalamata olives in a large bowl.
- Whisk together dressing ingredients in a small bowl.
- Pour dressing in the salad mixture and toss until coated.
- Serve with crumbles feta cheese on top

i miss making and eating greek salad ever since we moved here,,i used to have loads of this in Astoria, NY where Greeks and greeks salads alike are abundant:) hee!
salad is really the way to go in summer. it is light and refreshing. i love greek salad. i love feta cheese and olives. this salad looks good.
